My dad grew up with this... one of his favorites when grandma was making the meal "stretch"... and now one of ours! SUCH an easy meal, very filling and very inexpensive. The kids love these... especially when we deep fry them, but my gym guilt was too high so we went the less fatty route...
Mix 2 or 3 cups of bisquick and a can of creamed corn together... add water or milk until it's pancake consistency. Add a chopped onion and your ham diced up (a cup or two... when we make this without Easter leftovers about 1 ham-steak does it), and that's it!
I've made them in muffin tins, but our preferred method is to make them just like pancakes. And don't forget the syrup!
These are sooo good... and filling!
