I love soup!  There.  I said it... and I'll say it again... I. LOVE. SOUP!

However, I'm not very good at making soup... except for these 2 recipes!  They're easy and delicious!

Turkey Taco Soup:

2 cans of Pinto Beans 

1 can black beans

2 cans of Rotel tomatoes

1 can corn

1 packet of taco seasoning

1 packet of ranch dressing mix

1 onion, chopped

1 green pepper, chopped

1 lb ground turkey

beef bouillon and water (to taste and to the right level of soupyness!)

Brown the turkey and peppers/onions and then add everything to a big pot or crockpot... the longer it cooks the better!  So good with sour cream and cheese...

And my other never fail cold weather soup recipe is another spicy one...

Chicken Tortilla Soup:

sautee 1 tsp minced garlic and 1 chopped onion in a soup pot with 1 tsp of olive oil until onion is tender, about 3 min.  Add 2 cups water, 1 small can of chicken broth, 2 cans of Rotel Tomatoes, 1/2-1 tsp chili powder, 1/2-1 tsp cumin (depending on how spicy you like it!) 1 T lime juice (optional) and 1 shredded rotisserie chicken.  That's it!  sometimes I put some beef bouillon in for taste.  Serve with tortilla chips... YUM!  This is also another soup that tastes better the longer it cooks, so crock pot is a favorite this time of the year!
